7 Weeks of Meatless Fridays

Lent begins this week. Mardi Gras is Tuesday (ummm... does that seem redundant to anyone else?), Feb 24th. Ash Wednesday is Feb 25th. This year, the 40 days of lent include 7 Fridays:

Friday, Feb 27
Friday, Mar 6
Friday, Mar 13
Friday, Mar 20
Friday, Mar 27
Friday, Apr 3
Friday, Apr 10


As a Catholic family, we observe meatless Fridays (and Ash Wednesday). This will be Einstein's first year joining us - his little brothers are still too young to understand. HandyMan and I both feel Einstein is old enough to grasp the idea of sacrifice, even on this very small scale.

So, if you follow me on twitter, you know that I have been assembling some meatless Friday recipes from some amazing bloggers. Don't worry - none of these are my recipes! I wouldn't do that to you!

For the 40 days of lent I will be posting one of my faves each Monday with links to their photos and instructions. That will give you plenty of time to get the necessary ingredients. So if your family observes meatless Fridays and the McFish sandwhich isn't going to cut it for you, tune in each Monday. There will be a button for you to grab so you can participate in 7 Weeks of Meatless Fridays and post your favorite Lent-friendly recipes.






Without further ado, here is the recipe I have chosen for week 1.





The credit for this recipe goes to Modish Plum. What's awesomely awesome-alicious about Jeana's blog is not only does she have delish-looking recipes, she has well-photographed, step-by-step instructions and a gorgeous new blog design (nope, I wasn't her designer!).

Italian Stuffed Shells



What you need:
1 box jumbo pasta shells
1 large container of whole ricotta cheese
1 heaping cup shredded parmesan cheese (plus another small handful)
1 egg
2 egg yolks
1 heaping tbsp chopped fresh basil
2 heaping tbsp chopped fresh flat leaf parsley
1 1/2 tsp salt
1/2 tsp pepper
1 (smallest) box of frozen chopped spinach - optional
1 tbsp minced garlic
few shakes of dried minced onions
1 heaping tsp red pepper flakes
1 1/2 jars of spaghetti sauce
shredded mozzarella cheese

  8. That's so funny... for three weeks running I've done our menu planning and I've had three meatless Fridays!
    I didn't even realize it until I saw this post.

    I did it without even thinking about it...maybe because I grew up Catholic?

    I'm looking forward to your recipes!

  9. We have lots of meatless nights (much to my husband's dismay) but I like the idea of designating one night a week for that type of menu.

  10. My catholic upbringing shines during lent, I strictly follow this... but the rest of the family doesn't.

    This recipe looks awesome, but husband doesn't like ricotta, so it won't work. I might have to make it for myself and let him fend for himself!

  12. We're not Catholic, but my husband doesn't eat anything with a face and my son doesn't eat anything from the ocean, so I am always looking for great filling vegetarian meals. My son and I jut made stuffed shells from Paula Deen's My First Cookbook, but these look so much better. Thanks for sharing!

  14. Yummy! I love stuffed shells--haven't made them forever. I'll have to try this recipe. I'm wanting to add more meatless dinners to our rotation--maybe we'll join our Catholic friends and do the meatless Friday thing. But no fish sticks! :)

  16. I took a peek over at her blog and it looks like there's lots of yummy stuff! And I'm one of those kitchen challenged individuals who needs a picture before I try a new recipe, so multiple pictures are even better. : )

  19. i make a version of that recipe (i use fat free ricotta and 2% motz cheeses and more spinach). My family loves these!

    we have been going meatless a couple of meals per week at our house just to cut some spending out of our grocery bill...so i look forward to your recipes.

    We write a family food column for the Concord (NH) Monitor called Frugal Feasts. We often feature meatless meals. One that we plan on making during lent is veggie panini, which we make in a big batch in the oven. here is a link to the recipe, which features a ton of photos...

  24. OK. I'm going to say it. You. Are. Fabulous! I love that you are doing this series of posts on so many different levels.

    As a Catholic and as an Italian pasta is always our life on Friday's during Lent. (How this could possibly be considered a sacrifice...I dont' know) At any rate, Isn't it amazing how much you crave meat the moment you are told you can't have it?
